Line Cooks

Core Responsibilities

  • Sets up station according to restaurant guidelines.
  • Prepares all food items as directed in a sanitary and timely manner.
  • Follows recipes, portion controls, and presentation specifications as set forth.
  • Restocks all items as needed at the start of and throughout shift.
  • Cleans and maintains station in practicing good safety, sanitation, organizational skills.
  • Has understanding and knowledge to properly use and maintain all equipment in station.
  • Assists with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.

Qualifications

  • Prior experience with various Line Stations (Meat, Fish, Garde Manger, Dessert, and Expo stations.
  • Commitment to quality service, food and beverage knowledge, and attention to detail.
  • Basic understanding of professional cooking and knife handling skills.
  • Ideal candidate will have a minimum of 2 years line cook experience in a fine dining venue.
  • Understanding and knowledge of safety, sanitation and food handling procedures.
  • Fluent in English language and professional communication skills are required.
  • Ability to work varying shifts as needed, including weekends and holidays.
  • Ability to work in a team environment.
  • Ability to work calmly and effectively under pressure.
  • Must have problem solving abilities, be self-motivated, and organized.
  • Preferred if candidate owns Knives/tools to work with.
  • Preferred ServSafe Certified.

-Physical aspects of the job include standing throughout the shifts, occasional lifting (up to 50 lbs.), vocal communication with staff.


Dishwashers

Core Responsibilities

  • Wash dishes, glassware, flatware, pots, or pans, using a dishwashers or by hand.
  • Keep dishwasher clean and immediately report any functional or mechanical problems to the Chef or General Manager
  • Monitor dishwasher water temperature to ensure sanitary wash cycle
  • Maintain kitchen work areas, equipment, or utensils in clean and orderly condition
  • Place clean dishes, utensils, or cooking equipment in storage areas
  • Maintain adequate levels of dish detergents and cleaning supplies
  • Sort and remove trash, placing it in designated pickup areas
  • Sweep, scrub, and mop kitchen floors
  • Clean food preparation and production areas as required
  • Receive and store supplies
  • Handle tableware carefully to prevent breakage and loss

Qualifications

  • Ability to work day (AM) or night (PM) shifts in support of operation.
  • High attention to detail required
  • Fluent in English language and professional communication skills.

Physical aspects of the position include, but are not limited to; must be able to lift, carry, push, pull up to 50 pounds , ability to stand entire shift, ability to read and comprehend simple instruction.


Host/Hostess

  • Receives and records patrons' dining reservations
  • Greets guests promptly with a warm and friendly smile
  • Seats guests accordingly throughout the dining room
  • Helps train new hosts
  • Is polite and friendly to guests and fellow team members no matter what the circumstance
  • Maintains contact with management, serving staff, and guests to ensure that dining details are handled properly and guests' concerns are promptly addressed
  • Takes direction from management
  • Provides each guest/patron a thankful gesture for patronizing the establishment upon departure
  • Is knowledge of menu and can sell gift cards, and process transactions on the computer
  • Helps with any guest needs

Food Runner & Bussers
